Cassava Fries at El Paraiso in Urbana, IL

This was my first time trying cassava fries. In general I'm a huge fan of cassava, so I'm honestly surprised I had never had them before! And wow, these did not disappoint. The exterior was crisp and textured without being crunchy, and gave way to a silky smooth interior. The flavor was lovely, much warmer and heartier than a potato fry. My only complaint is that they were more greasy than I would've liked, but this wasn't a major detractor. Very filling. I rate 4.5 fries out of 5!
